Stuffed Tomatoes A La Kin (link no longer working)
8-10 medium sized tomatoes
6 slices of bread (your favorite kind…white/whole wheat/sour dough)
1 Medium onion
4 cloves garlic
1 Tbsp. Oregano
1 Tbsp. Basil
2 c. water or stock
1/4 cup Worsctershire sauce
Optional grated cheese (whatever…mozerella, chedder, parmesan…I’d recommend against gorgonzola, cause it doesn’t smell nice)
Salt -n- PeppaGet a spoon. And a knife, make sure it’s sharp. They’ll help. And a couple paper towels. I’m sure a sauce pan wouldn’t hurt. Maybe an oven, well…not maybe, you will need one.
Cut the tops of the tomatoes. Watch your fingers, the probably won’t taste good. Carefully scoop the guts out into a bowl. Set aside. Pat the inside of tomaters down. Salt lightly and place upside-down on another paper towel (I hope you brought enough).
The knife should still be sharp, so use it to mince the onion and garlic. Make the sauce pan nice and hot and put in some oil. Then put in the onion and garlic. Then add the tomato guts. Fry. Add spices and worsctershire sauce. Fry some more. Then start crumbling the bread into the mess. Add stock if it seems dry. When all the bread is mixed in, stir. Fry a bit more and keep adding stock until it’s all in there and it’s looking kinda mushy. Add the Salt-n-Peppa to taste. Get your hollowed out tomatoes and stuff ‘em with the bread/tomato gut/onion/garlic mush. You’ll have some left over. This is good, because it’s damn tasty and you don’t have to share. Enjoy.
Preheat oven to 375F. Take stuffed tomatos and place ‘em in baking casserole. They should be packed, but not too tightly. You might want to oil the bottom and sides of it to make sure things don’t stick. Cover with a buttered (or margerined) piece of baking parchment and let cook for 25 minutes. If you want, at this point remove the baking parchment and top with grated cheese. Cook another 5 in any event.
Serve. Await the adulation of adoring fans.
Mom’s Enchiladas (link no longer working)
1 can green chilies
2 cups water
3 Tablespoons corn starch
2 chicken bullion cubes
1 lb. ground beef
1 lb. grated cheese
1 onion chopped
2 cups vegetable oil
24 tortillas
1 shot tequilaBrown ground beef, drain, and set aside. Sip tequila.
In a small bowl, gradually add water to corn starch stirring constantly until thin paste. Combine green chilies, remaining water, bullion, and corn starch mixture and cook over low heat to thicken. Allow to cool enough to touch. Sip tequila.
Working with 2-4 tortillas at a time, lightly fry tortillas in medium hot oil until limp. Dip tortillas in sauce, coating on both sides. Place a small amount of beef, cheese, and onion in the center of each tortilla. Roll and place in a greased casserole. Pour any remaining sauce on top. Bake at 425’ for 15 minutes. Top with cheese and bake additional 5 minutes. Shoot tequila.
