Dark Bundt Cake

Dark Bundt Cake

Makes 16 servings.

2 1/2 ounces (2 1/2 squares) unsweetened chocolate
2 3/8 cups cake flour or 2¼ cups all-purpose flour
1 7/8 cups sugar
1 teaspoon soda
1 teaspoon salt
2/3 cup vegetable shortening
1 1/4 cups buttermilk, divided use
1 teaspoon of red food coloring
3 eggs

To prepare oven, pan: Preheat oven to 350 degrees. Grease and lightly flour bundt pan.

To melt chocolate: In glass bowl, microwave chocolate on high for 2 minutes. Set aside.

To prepare cake mix: In medium bowl, mix flour, sugar, soda, salt and shortening. Add 3/8 cup buttermilk. Beat for 2 minutes. Add remaining buttermilk, food coloring, eggs and melted chocolate.

To bake cake: Pour batter into prepared pan. Bake for 45 to 55 minutes or until toothpick inserted comes out clean. Serve warm or at room temperature.
