My Grandmother’s Lemon Dreams

My grandmother was an excellent cook (especially desserts) and she helped me learn to cook.

It’s probably no coincidence that most of my favorite recipes are for desserts. This is her recipe for lemon bars.

My Grandmother’s Lemon Dreams

1 cup flour
1/2 cup butter
1/4 cup powdered sugar
1 cup sugar
2 tablespoons flour
1/2 teaspoon baking powder
2 eggs, separated
3 tablespoons lemon juice
extra powdered sugar to garnish bars

Mix 1 cup flour, butter, and powdered sugar in a bowl. Press into the bottom of an 8″x8″ baking pan. Bake at 350 degrees for 15 minutes.

While this is baking, combine sugar, flour, and baking powder. Mix in 2 egg yolks and the lemon juice. Beat the 2 egg whites until stiff. Fold the beaten whites into the lemon mixture.

Pour mixture over the flour base while it is still hot. Bake at 350 degrees for 25 minutes. Remove from oven and immediately sprinkle the bars with powdered sugar.

Cool on rack and cut into squares.
