Gado-Gado

An Indonesian peanut sauce.

Gado-Gado

1 cup chopped onion
2 cloves crushed garlic
1 bay leaf
2 teaspoons grated fresh ginger
1/2 teaspoon salt
1 tablespoon peanut oil
1 cup peanut butter
1 tablespoon honey
1/4 teaspoon cayenne
juice of 1 lemon
1 tablespoon cider vinegar
1/2 cup coconut milk
1 3/4 cups chicken or vegetable stock

Cook the first 5 ingredients in peanut oil. When onion is transparent, add the rest. Mix thoroughly and simmer very low for 30 minutes. Stir occassionally.

Serve with chicken, rice, or vegetables. Garnish with raisins and sunflower seeds if desired.
