Kentucky Derby Recipes
What could be better for “the greatest two minutes in sports” than some recipes that can be prepared in two minutes?
Levy Restaurants has some quick and delicious Derby recipes including:
1 lbs Jumbo Lump Crabmeat - picked through for shells
1/2 cup Lemon Aioli - see recipe
Focaccia Crostini or Crackers 12 each
1 tbls Chives to garnishTo Prepare the Lemon Aioli:
Mix together 1/2 cup mayonnaise with the juice of 1/2 lemon, 1 teaspoon of lemon zest, a pinch of cayenne, salt and pepper to taste.
To Prepare the Crab Cocktail
Gently mix together the jumbo crab and the lemon aioli and refrigerate immediately
Serve the Crab Cocktail with focaccia crostini or your favorite crackers.
Bourbon Barbecue Glazed Short Ribs
2 lbs Short Ribs – boneless
3 tablespoons Barbecue Rub
2 cups Bourbon Barbecue GlazeTo Prepare the Bourbon Barbecue Short Ribs
Slice the boneless short ribs in ½ inch thick by 4 inch long strips. You can have your butcher do this as well. Using a meat tenderizer, pound out the short ribs until they are ¼ thick. Place one piece on each of the bamboo skewers. Season the short ribs with the barbecue spice. There is a recipe below however high quality barbecue spice rubs can be purchased and used. Cook the short rib skewers over a live fire of charcoal or using a grill top in your kitchen. Quickly cook the short rib skewers on the hot spot of the grill and cook for one minute on each side. Baste with the Bourbon Barbecue Glaze as you grill.
To Prepare the Bourbon Barbecue Glaze
In a sauce pan heat up 1 tablespoon of vegetable oil and add ¼ cup of diced onions. Cook until soft and translucent. Add ¼ cup of bourbon. Flame the alcohol. Add ½ cup of fresh orange juice, 2 teaspoons of minced chipotle peppers and 2 cups of your favorite barbecue sauce. Simmer briefly. The glaze is ready.
Barbecue Spice Rub
Simply mix the following spices together.
1 cup Paprika
½ cup Sugar
¼ cup Salt
½ tbls. Onion Powder
½ tbls. Black pepper
½ teas Cayenne Pepper
1 teas White Pepper
2 teas Cumin
1 teas CinnamonServes 10 -12 for appetizers or 4 – 6 as an entrée.
